Greek (sorta) scrambled eggs.

An easy and delicious one from this morning.

For one person:
-Fat of your choice (butter, olive oil...I used bacon grease today)
-2-3 eggs, cracked and whisked with a splash of half and half
-Small shallot bulb, minced
-Small garlic clove, smashed and chopped
-Tb or so each chopped fresh parsley, chive, oregano, basil
-Couple Tb feta, crumbled
-Salt and pepper to taste

How-to:
-Heat fat, cook the shallot until soft and brown
-Add garlic and stir/cook until it softens and no longer smells raw, about 30 sec
-Add eggs and herbs, scramble
-Just before they are done to your liking, add feta, salt, and pepper

Enjoy! If you cooked this until it was a solid "pancake" instead, you could put a piece in a breakfast sandwich with a slice of ham or something, and maybe some tomato. Mmm.
