Cauliflower and sausage, two ways.

Whoo, mama. I adored both of these meals, and both were excellent paired with a nice fresh salad. Mmm. Next I have to figure out what to do with some nice ground chuck that was on sale at Kroger. Stay tuned for a yummy meatball or burger recipe!

Loaded Mashed Cauliflower and Sausage Dinner
Ingredients:
Fresh or frozen cauliflower, about 1c per person
Uncured bacon, 1/2-1 slice per person, cooked (reserve fat)
Butter, 1 pat per person
Green onions, sliced, 1/2-1 per person
Cream cheese (we used an onion and chive one...mmm)
Nutritional yeast, celery seed, black/white pepper (all to taste/optional)
Salt
Your favorite sausage (I used Kroger's Simple Truth smoked pork sausage)

Steam, boil, or nuke the cauliflower until tender. Frozen will go faster, obviously. Drain well and stick in the food processor with remaining ingredients. Taste for seasonings and adjust. Use the reserved bacon fat to cook your sausages, and serve with the cauliflower purée and a big salad. Enjoy!

Sausage, Cauliflower, and Egg Scramble
Ingredients:
Reserved bacon fat
Leftover cauliflower purée, about 1/2c per person
Pastured eggs, 2 per person
1/4 large shallot per person, sliced thin
Your favorite sausage, cut into slices or chunks
Shredded cheese (optional)

Heat bacon fat and fry sausage until almost done. Add shallot and cook another few minutes until softened. Crack eggs and beat with cauliflower purée, add to pan and scramble. Top with seasonings to taste (I enjoyed mine with cayenne, salt, and turmeric), and shredded cheese if desired. Also excellent with salad for brunch!
