What we did Friday evening. Jess and Samia made empanadas with FOUR different fillings: Argentine-style beef,
Puerto Rican-style ground turkey, creamed spinach, and ham & cheese. Oh goodness they were awesome. Then I made
salad and Cat made sangria, and for dessert we walked to the delicious frozen yogurt place on Thayer! |
Last week was a long one for all of us at work. So, what better way to kick off Miss Jessica's pre-birthday weekend than with a little empanada party? She cleans out her freezer in preparation for moving next weekend, we all get lovely food and company...everybody wins.
After this wonderful evening I proceeded to fall into bed Friday evening and not officially get out again until Saturday evening (with the exception of staggering into the kitchen and making/drinking a brief, hasty brunch smoothie). Sometimes you don't realize how exhausted you are until you pull one of those! Needless to say, the cold I felt coming on this week has been thoroughly destroyed by my immune system. Go white blood cells!
